Beauty Trailmix

March 30, 2009

Do you get hungry for tasty little snacks during the day? Do you like to sometimes eat packaged bars that are easy to buy at work, like Luna, Cliff, or Zone bars??? Or things like premade sandwiches or prepackaged foods?

In our quest for perfect, vibrant health, effortless weight maintenance, and being as detoxed as possible, we have to really pay attention to what we are consuming. Here and there is okay in moderation, but is it a pattern that you are snacking on faux health products b/c you just don’t have anything on hand and end up starving and desperate to eat something fast and easy?

p1011332Well a great way to get MUCH better nutrition into your body- including superfoods- is to make your own trail mix. If you buy in bulk or online, you can actually get many of these superfoods at a decent deal. If you really do the numbers- buying that Zone bar for $3 a few times a week, which isn’t doing your body any good, is really the more expensive, and health-zapping option.

I made this Beauty Trailmix this weekend, from ingredients I got online and at Wholefoods. It took me like 3 minutes to pour them into a large bowl and mix. This way you are getting the most beautifying and beneficial ingredients at a very reasonable price.  So plan ahead! Make a big mix for the week or the next 2 weeks, that you can snack on a handful or so at a time. To keep from overdosing on the mix, take only a cup or so to work in a Ziploc baggie. ☺

Beauty Trailmix:

Goji berries: Goji berries are also a good source of B vitamins and antioxidants, which protect against harmful free radicals that damage cells in your body. They’re also rich in polysaccharides, have 18 kinds of amino acids, and are a rich source of potassium.

What’s else is really great is that goji berries help and assist in weight loss because of its exceptional “master molecule” polysaccharides which improve the conversion food into energy and hence reduced body weight. Goji berries contain extra characteristics which assist to control the blood sugar and appetite. Goji berries contain 21 percent fiber by weight. High fiber foods are filling and moderate blood sugar levels. They also have chromium which also aids to protect lean muscle mass during weight loss.

Mulberries: In Chinese medicine, mulberries are considered a blood tonic, meaning that they cleanse the blood and increase its production, strengthening the entire system. In Chinese medicine, mulberries are also believed to strengthen the kidneys and cleanse the liver.
A great source of resveratrol, a potent phytonutrient also found in grapes that researchers believe can prevent cancer and aid in the fight of existing cancers,
In Turkey, mulberries are used to treat constipation! Because they are quite high in iron, mulberries are a great food to use in the treatment of anemia. Mulberries also have a high vitamin C content.

Goldenberries: Also known as the Gooseberry, and the Incan berry. Larger than a raisin or goji berry, yellow/orange in color, they are packed with bioflavenoids and antioxidants. They are high in phosphorous, vitamins A, C, B1, B2, B6, and B12. They are also extremely high in protein (16%) for a fruit.

Pecans: Contain more antioxidants than any other nut, according to a recent report published in the Journal of Agriculture and Food Chemistry. Pecans contains vitamin E, calcium, magnesium, potassium, zinc and fiber, and beautifying fats- so help you feel full.

Coconut flakes: Coconut is a tropical fruit that is rich in protein and healthy, thyroid-supporting fats. The meat of the coconut is very good in destroying intestinal parasites. The fat will also help keep your skin supple and smooth!

Cacao nibs: Has more antioxidant flavonoids than any food tested so far, protect from environmental and metabolic toxins , help repair and resist damage caused by free radicals, and may reduce risk of certain cancers. Cacao beans are rich in healthy fats like oleic acid, and a number of essential minerals, including magnesium, sulfur (which promotes beautiful skin and detoxifies the liver!), calcium, iron, zinc, copper, potassium and manganese.

p1011340Magnesium – Cacao is the #1 source of magnesium of any food. Magnesium balances brain chemistry and opens 300 detoxification pathways in the body. 80% of Americans are deficient in Magnesium!

Remember: To fully benefit from chocolate’s wide array of nutrients, you must eat chocolate that is as close to its natural state as possible. Whole cacao beans and nibs are best. You lose most of the health benefits when you eat commercially produced chocolate!!! (Which is heated to very high temperatures, and contain pasteurized sugar, dairy and other additives)

Raw cashews: Cashews are known to provide many nutrients which are essential to the body; including zinc, magnesium, iron, phosphorous, and copper.  They are known to lower cholesterol levels and may help reduce your chances of developing diabetes.

Pistachios: Full of potassium, fiber, thiamin, B6, copper, manganese, potassium, phosphorus, magnesium, pistachios provide a significant amount of the bioactive carotenoid lutein that is also found in dark green leafy vegetables such as broccoli (good for your eyes).

Feel free to experiment with your own super berries and other nuts- like my other favorite the mighty almond. 🙂

Have a great week!!

xx Kimberly

Detoxing the Set

March 26, 2009

Me and Kristen Bell on set. Kristen loves the taste of The Detox Smoothie and nicknamed it, "Shmoopie," because she thinks it tastes half like smoothie and half like a soup! 🙂

So all of yesterday afternoon and evening I was on set of When in Rome, starring Kristen Bell and company, coming out this summer. I was invited there to make food for all the actors and producers. And of course that would include the Detox Smoothie, which everyone loved. I put them in cups and straws for everyone, and at one point I looked up and saw so many people drinking their bright turmeric-yellow smoothies all running around the set!! Awesome!!

I just love Danny Devito! Talk about a really humble, sweet man. 🙂

Me and the hilarious Jon Heder- from Napolean Dynamite, and Blades of Glory!

GOOD MORNING! How is Your Colon This Morning??

March 25, 2009

p10113131 🙂 Ha!! This phrase cracks me up! I actually borrowed it from Dr. Norman Walker, one of my favorite holistic doctors who wrote entire books about the colon, and lived to be I think 116!

But seriously, let’s keep in mind that you are not cleansing unless toxins and waste are actually leaving your body. How you begin each and every day is important. It’s important to get in the habit of allowing yourself to have as complete an elimination as possible first thing in the morning.

This means that right when you wake up, you really shouldn’t eat anything immediately. If you do, part or the majority of your digestive fires will be directed at digesting the food you just put into your body, rather than focusing on your very important first (and maybe only) elimination of the day (!).

Here’s an excellent habit to get into:
Turn on your tea kettle first thing, then make yourself a cup of:
– Hot water**
– Fresh juice of a quarter of a lemon squeezed in lemon1

**Remember your water should be fairly hot but never boiling!!! Let it cool down before you squeeze the lemon in. Don’t kill all the enzymes and vitamins of the lemon!

This drink will help relax your bowels and promote elimination. The warm lemon water will also dissolve mucus in the body, flush and support the liver, and help with the absorption of minerals. So let this be the first thing that enters your lips in the morning- and don’t eat anything for at least one hour after you wake up, as your body can use this time to detox.

Hope you are having a great week so far!
All my very best,
Kimberly 🙂

Getting Started- and I Mean REALLY Getting Started: A Healthier, Detoxed, Perfect Weight, Energized You!!!

March 22, 2009
When you start to detox, you might experience some physical symptoms such as being moody, light-headed, breaking out a bit, feeling tired. But quickly thereafter you will feel more energized and alert! It may be a bit disorienting b/c your emotions will also detox. The countless benefits of detoxing include: Moving into your natural weight, letting go of water weight and puffiness, having more beautiful skin, nails and hair, and being more Sattvic (emotionally and mentally balanced). You will have more energy, clairty, and stamina to pursue your goals and dreams, and live to your fullest potential.

So, realistically speaking, it’s best to ease into any new diet. And when I say the word “diet” I never mean a way of eating for a certain finite amount of time, but rather your long-term way of eating. ☺ I don’t advise anyone to go from being a hardcore meat-eater to a raw vegan instantly! And don’t worry about fitting into any category anyway. What it’s about is upgrading the quality of your food as much as possible, so your body gets the optimal nutrition it needs and digestion is as easy as possible, while bringing in as few toxins as possible into your body.

I know it can be confusing as to where to start. So here are some ideas for starting out!

If you eat bread, switch to sprouted Ezekial and Shiloh Farms brand bread. No more white bread, and so-called “fortified” wheat varieties.

If you eat pasta- switch to wholegrain or sprouted varieties.

If you eat rice- try substituting quinoa instead, which is a delicious ancient grain from South America packed with protein.

– If you eat chips, stop. Ha! Just kidding…sort of. At least switch to flaxseed varieties that I think I’ve seen at Trader Joe’s and Wholefoods. And never eat rice cakes! They are a faux amie. This puffed grain product is off the glycemic chart and will make YOU puffier than the Pillsbury Doughboy.

– Try to use your microwave as little as possible. Until you wean yourself off it and throw it out. 🙂 If you make frozen meals, start weaning yourself off them, and instead learn to make some really easy, fast meals.
Frozen then microwaved food is deader than dead, full of preservatives, bad salt, and other yuckiness that will interfere with your vibrant health!

– Buy as much organic produce as you can afford. Yes it does make a difference and yet is it worth it! Not taking in all those pesticides and herbicides is a detox in and or itself. Plus you will get an average of 50-85% more vitamins and alkalizing minerals.

– Throw out all your table salt and only use Celtic sea salt (make sure the label says dried in the sun and wind) for you and your family. Table salt is a girl’s worst friend. It will demineralize your body and make you look bloated and way heavier than you really are. No thanks!!!!

– Limit your intake of dairy as much as possible. Or cut it out! If you really love cheese, upgrade the quality by switching to raw cheese varieties, which is at least not pasteurized. Kefir is better than regular yogurt.

– Have the juice of at least one lemon a day- on salads, in smoothies, in water, etc.
You can start calling me the lemon girl because I always talk about lemons. But it is an amazing cleanser and liver supporter. This is a very easy thing anyone can start doing, today.

– Start limiting your intake of coffee to one a day. Coffee is acidic, taxes the liver and adrenals, is laden with toxic pesticides, causes mood and energy swings… I could go on and on! Start replacing to start with green tea, which still has some caffeine. Then you can move to rooibus, yerba mate, and herbal teas! Trust me, you really don’t more than one a day!

– Limit all colas AND diet Colas as much as possible. Start having 3 or less colas a week…until you cut it out! If you think this is impossible, guess again! Once you get over the initial cravings and distance yourself from it, you will start feeling so much better and become horrified that you allowed the fizzy poison to enter your lips. For more info on why diet colas really make you fat, read my blog, “The Diet that Makes you Fat.”

– If you eat meat every day, cut it down to every other day.
Meat, which is really the muscle of an animal, has to be broken down from its complex amino acid chains into simple amino acids and then assimilated into the body. This requires a ton of energy and the enormous generation of uric acid- making meat a very acidic food product that putrefies and ferments in your digestive tract. Very, very toxic!! Not to mention the shocking amount of hormones, steroids, and toxins that are IN the meat, because animals in our country are fed corn laced with such things to make them grow faster to be slaughtered faster (including farmed fish). GROSS.
Please read my blogs on meat and corn.
Oh, and yes, fish is absolutely meat!!!! Fish are still complex beings, and have your ever thought that when you eat mussels, lobsters, shrimp, and other bottom readers- you too are taking in the toxic waste that make up their diets??

– Stop using Splenda, Equal, Sweet ‘N Low immediately! Please! Again, these are liver-clogging, high glycemic, scientifically engineered, scary products. Trust me, you will have a MUCH easier time maintaining your weight, keeping your body detoxed and looking beautiful without all this artificial crap. If you want to look vibrant- switch today to stevia, and occasionally raw, unfiltered honey and pure maple syrup.

Start making My Glowing Green Smoothie. Make the commitment to make it once a week, and build up from there.

– Make the Detox Smoothie every Sunday.

There are more but I better stop for now. This post is turning into a short book. 🙂 Don’t worry, there are more to follow but see how you do with these.
Have a great week. Happy Detoxing!
xx Kimberly

Food/Lifestyle Discussion

March 15, 2009

So this blog is again inspired by my friend Nadine , who quite recently ended her 6-Week raw challenge! Here were some of Nadine’s challenges with eating raw: 1) She felt she always had to think of what to eat next and she became obsessed with food 2) She kept thinking she was missing out on the “good” stuff- AKA cooked food 3) It was expensive.

I made Nadine some raw snacks once, then she decided to go all raw for 6 weeks, with my blog as the main guide! I feel bad b/c I feel like she was left dangling in the wind- I myself had so many teachers and holistic doctors guiding me on my path. It also makes me realize that I need to write a “how to” book on being around 80% raw (which I think is a good percentage for most people in the Western world), so it is easily laid out!!! Easy recipe plans, shopping lists, how to transition, etc.

Eating living, raw, unprocessed foods should be about appreciating the amazing abundance of fresh plant food from the earth- which nourishes us the most, is the easiest to digest and assimilate nutrients from, is the best medicine on earth and is the most sustainable way to eat. What’s good for you is good for the planet!

When you eat a ton of fresh, living produce, you will be a lot calmer in general, it will be easier to breathe slowly all the time and meditate, and you get more clarity. You realize that your emotions- happiness, sadness, boredom, etc. do not have to be celebrated, rewarded, squashed, snuffed out, suppressed, etc. with food- there are a million other ways to express yourself! No diet book in the world can help you if you do nothing to break your emotional bond with food. Food and emotions do not have to be shackled together. As you keep detoxing and your cravings go away for foods you’ve had in the past, you will still appreciate food- but it becomes less about stimulation and more about nourishment. The freshest produce and simple sauces of lemon, olive oil and cayenne pepper start to taste more delicious than anything on earth!

There is definitely a transition period as you begin to replace your usual food with more raw food. But I promise you, it is just that: a transition. In my own life, I used to always think about food- like what I would get at lunch, what I would have for snacks, and by dinner how many calories had I eaten so far in the day? And how many grams of carbs??? Then I had to go to the gym- to get an elliptical machine and burn at least 300 calories! But why am I still so hungry??? What can I eat now that is “good”??

I haven’t counted fat grams, carbs, or calories in at least 3 years, since I’ve been mostly raw. I do not think about food, except when I’m hungry or evaluating a food for its nutritional value, for an article I’m writing. And the food I eat is so rich in beneficial fats and plant proteins and minerals, that I am always satisfied and BEST OF ALL, never, ever hungry. I eat as much as I want, every single day, and know I won’t get fat. I never dreamed it could be so easy to maintain your desired weight! (Well easy once I figured out what to eat, how to make it, and what to have stocked).

I do one huge grocery trip a week and a few to the farmer’s market- so I work it into my schedule and actually think it’s quite fun. I love food shopping! I never buy casual food outside (like snacks, lunch etc.) and make my own food 97% of the time- so though my grocery trips cost more $$ seemingly- the cost of not buying meat, not going out to lunch every day or dinner often, not buying coffee at Starbucks, and making my own green juices and smoothies and meals means I don’t spend much more than the average person on food! Not to mention that I don’t have to pay for doctors, medications, cold medicine, etc. It’s easy to make a business meeting getting together for tea instead of dinner, and going out with a friend for a walk or making dinner together instead of eating out all the time, all the time (I know this is going to be a tough one to get over for my fellow New Yorkers ☺  ).

081125_jump_300It’s when you’re starting out- when you constantly buy premade raw food and raw deserts instead of making your own, buy all your juices at juice bars, don’t plan ahead and get your nuts/seeds/herbs, etc. in bulk- that’s when raw food can seem super expensive!!

Since most of what I eat is so easily digested and filling, along with not counting calories or carbs, I no longer count the calories I burn or the minutes of time I jog. Well I don’t jog anyway anymore or work out at a gym. I haven’t in years!! I just walk to get to places in NY and practice yoga- which does more than just “burn calories.” The kind of yoga I do, with lots of thyroid-stimulating asanas, will help make your metabolism and endocrine system run optimally, so you will more easily maintain your body weight. No more suffering on the torture machines!

Things are not so simple s reducing them to numbers…we have to consider how a specific food item will affect my body, skin and mood. I consider if a food has its enzymes intact, is it living or dead, organic, fresh, processed, heated in a microwave or made with compounds foreign to the body, like Splenda??

I tell you all this not to be like, “Yippee, good for her!” But because I’ve tried every diet, and I know that incorporating more living foods into your life can work for most everyone! Including you. So I hope you will try a few things here and there. ☺ I think Nadine’s main issues are probably the same ones you may have also, so I’ll be sure to write more specific tips in the future these issues, until I get to write that food book!

I’m on the train to Philly right now to do the morning show there tomorrow… 081125_jump_335
So wish me luck and have a great start to the week!

Stylecaster Video

March 12, 2009

Hey guys! So here is a little video from this cool new website that is launching:

Check it out!

By the way: Last week I had to make The Detox Smoothie for TV twice, and I realized the average person will like it much better if it is much more fruity and chunky and not so watery…so I changed the recipe to 2 apples and 2 pears. Now you can really detox away in a yummy way! Even the camera man loved the new recipe. 🙂

Also, clean water is a big passion of mine, and a big focus of our charity partner, Project Concern International.

I also met a woman who is involved with Clean Water for Haiti, which is a Canadian based volunteer-run organization, working to improve the lives of Haitians by supplying Biosand water filters to individual homes. Check out their blog- their goal is to supply clean water to 15,000 people! .

Okay have a great week!

All my very best,

I’m Watching the Watchmen’s Diet

March 9, 2009

Me and the lovely Malin Akerman, star of Watchmen

Malin AKA Silk Spectre!!

So recently I got to catch up with Malin Akerman, who stars as Silk Spectre II in Watchmen. I was fortunate to have met Malin this past Fall and have gotten to hang out with her a bunch since. She has  amazing, beautiful energy and we always have a lot of fun. I love making her food to support that Shakti she has going on. 🙂
This last time I got to make her lunch, which she really loved. ☺

She asked me what I would recommend for dealing with stress and for added energy- since she has been doing so much international and national press for movie, and running around nonstop. One of the things I recommended to her was maca, which is great because it is a root from South America that you can buy in a powder form, and take it with you when you travel. I have heard that that Incan warriors used to consume maca then run for days! You can buy maca powder at a health food store, or online at Amazon. I adore the taste of maca- like dried sweet potato!

Maca increases overall feelings of well-being, and really helps reduce anxiety and stress. It nourishes and calms the nerves with calcium, phosphorus, vitamins B1 and B12 , and fatty acids, which all work to benefit the nervous system.

Scientists and doctors are now finding maca to be one of the best natural ways to regulate and support endocrine health. It regulates metabolism, energy levels, growth, sexual development and the sense of well being and a positive outlook of life. Thankfully, maca does not contain hormones itself. Instead it provides a unique set of nutrients that directly fuel the endocrine system and help the glands to produce vital hormones in precise dosages predetermined by one’s own body.

Maca also increases energy and endurance, helping to alleviate fatigue. So rock on! There is NO better way to start your breakfast or lunch (if lunch is your first meal of the day) with a green smoothie with a tsp. of maca powder added in, the way I do most of the time! 🙂

I hope you had a great weekend, and have a great start to your week!

xx Kimberly

So the last few days I’ve visited a flurry of television sets, around also editing the yoga video.

Yesterday I shot a segment for Good Day LA! Which I’ll post it next week. Also went around to a bunch of television sets. It is fun to visit the sets, because it’s like stepping into its own little world. There are so many different people running around in all directions- but all focused on the positive outcome of one collaborative, creative project. Cool! 🙂

The Beauty-Nut Pate

March 2, 2009

BUSTED!! Eating out of the Vitamix, in my jammies, slippers and no makeup, circa 1:00 AM Friday night! After scraping it out and before washing it. When I'm home working a lot, my favorite form of procrastination is experimenting with different raw dishes. Here I am, eating the remnants in the Vitamix of what will be a version of chia-flax seed bread. Yummy!! 🙂

This past weekend I was holed up working.

So, when I’m hanging around home, I usually end up experimenting in the kitchen. It’s one of my favorite hobbies- and ways to procrastinate also. 🙂  I have about 50 different spices, 10+ different kinds of nuts, always a bunch of produce and herbs in the fridge, so the possibilities are endless.

I made this pate on Saturday. It’s great for when you’re straight up hungry, and you want a more dense lunch, easy dinner, or a snack. You can put a big scoop of it on your salad, on a piece of romaine heart, a nori sheet, or a slice of sprouted bread and top with sprouts! It is extremely filling.

No, this isn't the Beauty-Nut Pate, this is something else. 🙂

Pumpkin seeds are a major skin-beautifying food. They are loaded with zinc, which activates hundreds of enzyme systems in the body and helps alleviate skin imbalances like acne and uneven skin tone. They are also high in the beauty mineral magnesium, and Omega 3 fatty acids, which produce clear, radiant skin. Almonds are high in Vitamin E, and

NOTE: The magic liver cleansing combo of lemon/ginger/cayenne pepper is also present in this recipe.

The Beauty- Nut Pate (As in for beauty and contains nuts, but I guess it could also be interpreted as in for “beauty nuts” who are into all things beauty-related, because I hope those interested in beauty products would also be interested in eating for beauty as well  🙂 )

–    1 organic zucchini
–    2 inches of ginger root
–    1 clove of garlic
–    ½ cup Liquid Braggs or Namo Shoyu (unpasteurized aka uncooked soy sauce)
–    Juice of ½ lemon
–    ½ tsp. of Cayenne pepper
–    ¼ cup white onion

1 ½ cups of ground pumpkin seeds*
½ cup ground sunflower seeds*
1 cup ground almonds*

If you have a Vitamix you can throw the nuts in there and use the plunger to make a chunky consistency. If you don’t, grind the nuts in a food processor first, then add to a bowl and mix with the blended liquid mixture.

Oh sorry...I guess I don't have an actual picture of the Beauty-Nut pate. I'm here with this other random dish I made Saturday night. 🙂 But when you make it it should come out a nice pale green- not red like this dish!

* For best results, soak your almonds and pumpkin seeds in water overnight to begin the sprouting process, and rinse thoroughly. The sunflower seeds only need to be soaked for about an hour. Much more on this in a separate entry.

Enjoy!! I am leaving for LA tomorrow so I’ll write more from there.
Hopefully I’ll have lots more done between now and then…

Have a great day!
